Chana (Chick-Pea) Masala
Ingredients
4 cups cooked garbanzo beans (or 2 cups dried beans, soaked)
2 cups cooked potatoes diced
2 cups red onion chopped
2 cups tomato sauce or 1 cup tomato paste
½ can coconut milk
2tablespoons fresh garlic paste
2 tablespoons fresh ginger paste
2 tablespoons fennel seeds
1 cup fresh cilantro chopped
2 teaspoons turmeric
2 teaspoons lemon
2 tablespoons Chana masala powder
2 teaspoons salt to taste
2 tablespoons oil
1-2 cups water or to desired consistency
Directions
Heat oil in the skillet and add fennel seeds
After these are roasted, sauté the onions and then add the ginger and garlic paste.
Cook for a minute and then add tomato paste, turmeric powder, Chana masala powder, and salt.
After stirring for a few minutes, add water and potatoes.Â
Simmer for 15-20 minutes. Turn off the stove and add lemon, cilantro, and coconut milk, then mix everything together.
Serve with rice, naan, or roti.
Jhal Muri
Ingredients
1 tablespoon mustard oil
Lemon juice as desired
¼ cup Sev Tadka
¼ cup roasted peanuts
3 tablespoons cilantro
¼ teaspoon black salt
½ tsp red chili Powder
1 teaspoon roasted cumin unroasted can be used as well
¾ teaspoon Chaat Masala
2 ½ cups puffed rice
½ boiled potato

1 tomato chopped
¼ cup cucumber chopped
2 chili peppers optional
Vegetable Pulao
Ingredients
2 cups water
1 tablespoon oil
1 cup basmati rice
1 cup mixed vegetables (peas, carrots, and beans)
2 sprigs of cilantro chopped
1 teaspoon Garam Masala
1 teaspoon salt
Fried onion for garnish as desired
Vegetable Pakora
Ingredients
1 cabbage
1 bell pepper
1 carrot
1 onion
1 can French beans
1 box spinach
1 teaspoon crushed ginger-garlic paste
½ teaspoon Garam Masala
½ teaspoon salt
½ cup gram flour
¼ cup rice flour
Directions
Wash the vegetables and shred them to a uniform size.
Combine the ginger-garlic paste, garam masala, and salt, then toss in the vegetables.
Add the gram flour and rice flour. Mix everything well to make a dough, adding water as needed.
Heat oil in a pan on medium heat. Take small portions of the dough and drop them into the oil, frying until lightly golden brown.
Serve while hot and enjoy!
